Healthy Boiler Taste Testing Events 

In an effort to educate students about nutrition, Purdue Dining & Culinary will be holding taste testing events throughout the Spring Semester. The focus for Healthy Boiler's Nutrition in April 2019 focuses fitness and nutrition, with Beets as our Featured Ingredient.

Benefits of Beets

  • Versatile ingredient that can be cooked in many ways
    • Can be eaten raw, roasted to bring out flavor, juiced to add color and sweetness to a beverage and even dried into potato-chip style snacks
  • Powerful antioxidant
    • The photochemical that gives beets their red color reduces the formation of blood clots.
  • Increases oxygen flow to muscles
    • Consuming beets increases blood vessel dilation, which improves blood flow
  • Shown to enhance exercise performance
    • Nitric oxide produced from eating beets increases oxygen delivery throughout the body
  • Linked to longer exercise performance before reaching exhaustion
    • Greater results have been seen in the longevity of exercise for recreational athletes

Tasting Events** will be held on the following dates and locations:

Week of April 22, 2019 
Monday Dinner- Windsor Dining Court - "Roasted Citrus Beets"
Wednesday Dinner- Hillenbrand Dining Court - "Beet Cupcakes"
Friday Lunch - Earhart Dining Court - "Beet Hummus"

Each of these recipes are made available by our chefs.
